Add shrimp to pan; saute 2 minutes or until shells turn bright orange. Add onion, carrot, and celery; saute 3 minutes or until tender. Add tomato paste, stirring well with a wooden spoon. Cook 8 minutes or until tomato paste turns orange, stirring constantly. Add 5 cups water; bring to a boil. Remove from heat.2. Place half of shrimp mixture in a blender. Shape into 2 1/2-inch-diameter cake. Repeat coating and shaping with remaining crab mixture and crumbs, forming total of 4 cakes. Heat oil in heavy medium skillet over medium heat. Cook over low heat until mixture is smooth and bubble. Remove saucepan from heat and whisk in chicken broth and milk. Bring mixture to a boil, stirring constantly. Boil for 1 minute until mixture thickens. Add chicken and lemon juice. Heat to warm the chicken. Spoon Chicken Curry over the cooked rice and serve with accompaniments on the side so everyone can top as desired. Curry Accompaniments:. Chutney, tomato wedges, raisins, slivered almonds, chopped salted peanuts, sauteed onion rings, pineapple, chopped hard cooked eggs, crispy bacon bits, pickles (sweet or sour), flaked coconut, sliced avocado.
