Add vegetable stock to a nonstick baking dish. In a mixing bowl, add sliced baked pork medallions, maple syrup and brown sugar. Stir gently to coat. Add pineapples and juices. Polynesian Pork Loin Ingredients: pork, fresh, loin, tenderloin, separable lean only, raw soy sauce made from soy (tamari) spices, ginger, ground spices, garlic powder Directions: Cut 1 1/2 pound pork loin into slices of desired thickness. Place other ingredients in 1-gallon freezer bag and add pork. Turn several times to cover meat with marinade. Label and freeze. To serve, thaw meat. Layer in prepared baking pan and pour extra marinade over meat. Cover and cook in a 350-degree oven for 30 minutes. Turn meat and bake for 20 more minutes. Suggested sides: Baked sweet potatoes. 4. Healthy Fat-Free Glazed Baked Sweet Potatoes (Or Yams) Ingredients: sugars, brown sweet potato, raw, unprepared spices, cinnamon, ground Directions: Pre-heat oven to 400. Dice yam into slices less than 1 inch thick, no wider than 1 1/2 inches (the smaller you cut the quicker they cook). Place in bowl and pour brown sugar and cinnamon over top. Toss to coat. Get 4 sheets of tinfoil and a pan. Divide yams in four, and pour each quarter onto a sheet of tinfoil, scraping out any leftover juices from the bottom of the bowl and pouring over top the four bunches. Pull the corners of the tinfoil up, scrunching the tinfoil packages into bundles so no yam shows through, and place each bundle onto the pan, then in the oven. Bake for 25-35 minutes, taking yams from oven at 15-20 minutes, and retossing them with a spoon so all the yams get done. Serve warm, and refrigerate leftovers when cool. Source Archive

Carl Blackbird's Baked Sweet Potato and Chili Wedges Ingredients: sweet potato, raw, unprepared oil, olive, salad or cooking salt, table spices, pepper, black orange juice, raw spices, chili powder honey cream, sour, cultured spices, coriander seed spices, chili powder Directions: Preheat oven to 450 degrees F. Cut each scrubbed and unpeeled potato into 1-inch-thick wedges. Place in a container with a tight-fitting lid and toss with olive oil, salt, and pepper. Cover two metal pans with aluminum foil for easy clean up, if desired and arrange the wedges on the two pans. In a small bowl, combine orange juice, 3 tsp chili powder, and honey. Bake potatoes, uncovered, 25 to 30 minutes, or until tender, brushing three times with orange juice mixture, and shaking pan occasionally. Meanwhile, in a small bowl combine sour cream, 1/2 teaspoons chili powder, and 1/3 cup cilantro. When potatoes are tender, transfer to a serving dish, and serve with sour cream mixture. Knead it into the mash. Keep adding flour, 30g at a time, until the potato dough doesn't stick to the bowl or board anymore Flour your hands then roll the potato dough into a long sausage about as thick as your middle finger and cut it into inch long pieces. Freeze in a single layer on a baking sheet. This stops the gnocchi sticking together in the pan when they cook Boil some water then add the gnocchi, don't overcrowd the pan. In a large bowl, toss together the sweet potatoes, honey, ginger, walnut oil, cardamom, and pepper. Transfer to a large cast iron frying pan. Bake for 20 minutes in the preheated oven. Spread sticks in a single layer on baking sheet. Roast 20 minutes. Flip sticks over and bake another 15-20 minutes or until fries are browned. To make dip:.
